Method

  1. 01

Fry off your tomatoes and shallots in olive oil in a pan over medium-low heat with a big pinch of salt for 5 minutes to extract as much moisture as possible.

  2. 02

Add your garlic on top along with your black pepper, honey and balsamic vinegar and leave to simmer away for 5 minutes without stirring.

  3. 03

Turn the heat off then add your basil leaves on top then cover with your puff pastry.

  4. 04

Stab holes in the puff pastry with a fork, tuck the sides with a spoon then get it in the oven for 25 minutes at 375°F (190°C).

  5. 05

Leave it rest for 5 minutes, then slip it out onto a plate, scraping the edges slightly if needed so it comes out of the pan.

  6. 06

Garnish with more basil leaves, crumbled feta and balsamic glaze and enjoy.

Family notes

If we were to make it again, would add some chili in the sautee with the shallots and tomatoes. Additionally, topping with some salty Kalamata olives.
